HOMEMADE CROQUETTES

The Cro'vettes workshop produces a wide range of home-made croquettes, carefully prepared in our Braine-le-Château workshop. As well as our famous prawn croquettes, we offer a variety of flavours to suit every taste: cheese croquettes, lobster croquettes, Ganda ham croquettes, vol-au-vent croquettes and duck confit croquettes. Each recipe is made with quality ingredients, for an authentic taste and irresistible texture.

PREPARATION TIPS

Deep frying

Preheat your deep fryer to 180°C
Place the croquettes at the bottom of the clean basket, without touching each other
Cook for 3 minutes for a golden, crispy texture

If frozen, defrost before cooking

To ensure even cooking, be sure to defrost the croquettes before cooking them.
If they are slightly damp, roll them in breadcrumbs before cooking for a better result.

Our cheese croquettes are more fragile than industrial croquettes because we prefer to use more cheese and less flour. We therefore advise you to keep an eye on the cooking process. If you notice a small hole, it's best to take the croquette out and finish cooking it in the oven for 5 minutes at 100°C or 10 seconds in the microwave (just so that the centre of the croquette is hot).
